Healthy Plant-based French Toast

If you are looking for an easy, satiating plant-based breakfast, I present to you my healthy vegan french toast recipe. As a daughter, I know that my parents are always looking for food options that are lower in sugar and eco-friendly. Therefore, I decided to create this french toast recipe that is not only refined sugar free but also suitable for people who don’t consume dairy.

Ingredients: 

*1 tbsp ground chia seeds or ground flax seeds 

*1/2 tbsp liquid sweetener (e.g. maple syrup, agave…)

*1 cup unsweetened almond milk (or any other plant-based milk e.g. oat milk, soy milk, hazelnut milk) 

*1/2 tsp ground cinnamon

*1/2 tsp vanilla extract 

* 4 - 5 slices sturdy/ stale bread (it is important to use bread that is quite hard such as sourdough as soft breads such as sandwich bread will result in a soggy french toast) 

Method: 

  1. Mix all ingredients except bread in a large, shallow baking tray. Let it sit in the fridge for 15 to 20 minutes for the mixture to thicken. 

  2. Bring a cooking pan to medium heat and melt vegan butter or coconut oil. 

  3. Dip each slice of bread in the thickened batter for around 20 seconds on each side (soak for longer if bread is extra stale; soak for less if bread is soft) 

  4. Cook the soaked bread on a pan until golden brown on the underside. Then flip the bread and cook on the other side until golden brown—around 3 - 4 minutes.

  5. Plate the french toast nicely and top with toppings of choice: I used frozen microwaved berries, almond butter, and maple syrup. 

  6. Enjoy!
