Almond butter banana rice cakes

This healthy snack made with 3 simple ingredients (Rice cake, Almond butter, Banana) can be made in less than 5 minutes and is an absolute game changer if you are a parent or a student who is always busy. 

Rice cakes are an extremely versatile food that can be made savory or sweet depending on your mood and liking. In today’s recipe, I chose to make a sweet version using almond butter and banana. To spice up my snack, I decided to make a homemade almond butter spread that is not only sugar free & oil free, but also cheaper & tastier than store bought (in my opinion). 

Additionally, while I was reading into almonds' impact on the environment, I came across an article which said that although almonds are traditionally quite a water-intensive crop to grow, “almond farmers have been able to reduce their water consumption by 33% in the past two decades” (1). This is great news for our fellow almond lovers as this means you can eat almonds knowing that you are not harming the environment.

Ingredients

  • Rice cakes

  • Banana

  • Almond butter

  • Cinnamon

  • Pinch of salt

Recipe

  1. First grab two slices (or more) of whole grain or plain rice cakes, then take your almond butter (or any other nut butter such as peanut,  cashew, sunflower seed, hazelnut, etc) and spread a substantial tablespoon evenly onto your rice cakes. 

  2. Next you can sprinkle a pinch of salt onto the rice cake to enhance  the almond butter flavor. 

  3. Moving on, slice up a banana and place it onto the ricecake. 

  4. Lastly, finish off with a dusting of cinnamon to create a warm and cozy snack.
